Important Recipe Notes

  • Cut the biscuits into evenly sized pieces so they bake uniformly throughout the casserole.
  • Be sure to drain the cooked sausage well to prevent excess grease from making the casserole oily.
  • Whisk the gravy constantly while adding the milk to avoid lumps and create a smooth, creamy texture.
  • Check the center of the casserole before removing it from the oven. The biscuit dough should be fully cooked, and the eggs should be set.
  • If the top begins to brown too quickly, loosely cover the casserole with aluminum foil during the last 10-15 minutes of baking.
  • Use freshly shredded cheddar cheese; it melts more smoothly than pre-shredded cheese.
  • Allow the casserole to rest for 5-10 minutes before slicing and serving. This helps it set and makes serving easier.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the microwave or oven.
  • For extra flavor, add a little garlic powder, onion powder, or chopped green onions to the gravy or egg mixture.
  • This casserole can be assembled the night before, covered, and refrigerated until ready to bake the next morning.
