6. Shape the dough into a ball, flatten it slightly, and wrap it in plastic wrap. Pop it in the fridge for 1 hour.

7. Once the dough is chilled, prep your surface with flour and grab your rolling pin. Roll the dough out to about ¼ inch thickness. Use a heart-shaped cookie cutter to make cute Valentine’s cookies, and place them on your parchment-lined baking sheet.

8. Preheat your oven to 375°F, and bake the cookies for 8-9 minutes, or until the edges are just starting to turn color. Don’t overbake!

9. While the cookies are cooling (about 20 minutes), dye your buttercream frosting with a few drops of red food dye for a festive touch. Once the cookies are cool, spread a thin layer of frosting on each, and sprinkle with Valentine’s-themed sprinkles!

Important Recipe Notes

  • Chill the dough to help the cookies hold their shape while baking, and give them that soft, thick texture like real Lofthouse cookies.
  • Don’t overbake: These cookies should stay pale in color. Take them out as soon as the edges are lightly set — they’ll continue to bake a little on the pan.
  • If you don’t like almonds, you can leave them out or replace them with more vanilla.
  • Lightly flour your surface and rolling pin so the dough doesn’t stick. Aim for about ¼ quarter-inch thickness for soft, fluffy cookies.
  • Make sure the cookies are completely cool before adding frosting, or it will melt and slide off.
  • You can make the dough 1–2 days in advance and store it in the fridge, or freeze baked cookies (without frosting) for up to a month.
  • Use a small offset spatula for smooth frosting, then add sprinkles right away so they stick before the buttercream sets.
